So, he first step is to get a fresh carp. To clean it, follow these steps:

STEP 1: SCALE IT

Carp has large scales and you have to remove them before cooking. Hold the fish by the tail, take a knife and “scratch” the carp from the tail to the head, in the opposite direction of scales. Do it until they are all gone.

STEP 2: FILLET IT

Many people prefer fish fillets. To get the fillet make a thin cut behind the head, around the carp. Do the same around the end of the tail. Lift the skin and the meat and start cutting the meat from the bones. Do it carefully not to damage the bones, otherwise they will end up in your fillet.

STEP 3: SKIN IT

Remove the skin to get a better taste. Take a thin filleting knife. Cut under the skin along the fillet. Do it slowly and carefully not to cut off the valuable meat.

STEP 3 - Put the vegetables in a baking dish which was previously oiled and season it with spices you like, including salt. You may add parsley, garlic, or whatever you prefer.

STEP 4 - Some vegetables, like potatoes, need more time to be done than carp. Put the vegetables in the oven and bake on 180 degrees Celsius (350 F) for about 10 minutes and check them. When they start to get softer, put carp fillet on top, and put it back in the oven.

STEP 5 - Bake for 20-25 minutes. Check if necessary because cooking it for too long will dry out the meat.
